I was wondering if boot2 was included in a NAND dump done with bootmii ?
The reason of this question is, what if a new version of bootmii is released (with a modified boot2 stub loader) and I try to restore my NAND with dump done with an older version of bootmii ? Will it restore the old boot2 (and the old bootmii stub loader) or will it be left unchanged ?

The only reason I approved this is so I could provide a definitive answer:

No, boot2 is not included in a NAND Dump. This is because dumping/restoring the NAND with BootMii excludes the blocks boot2 is stored on. It cant erase itself while its restoring the NAND after all! (That would halt the restoration process and corrupt your boot2)
