Sure you didn't delete the wrong IOS? For example, any IOS ending in 0 (e.g. IOS60, IOS70, IOS80)? These IOS are System Menu IOS and uninstalling them will brick your Wii. If you have BootMii/boot2, your Wii can be fixed with that. If not, your Wii can only be fixed with a hardware NAND programmer (involves dismantling your Wii, removing the NAND chip and connecting it to a computer, then soldering it back in), and even then you will need a BootMii NAND backup taken using BootMii/IOS. If you have never used BootMii, there is probably not any chance of fixing your Wii.
The worst part is, stubs do no harm and deleting them gives no benefit :(
