Thanks to Amy of 3dsbuzz for bringing this to my attention. The easiest way to install Ubuntu Wii is now the whiite Linux installer. The downsides are that you need a usb keyboard and that it takes about 2 hours to complete. I've put the new instructions at the beginning of
the original "Ubuntu Wii" message.
