I have Whiite Linux running on my wii atm and I have a very quick question, is it possible to create a gui using just the terminal?

You can install the Twin window manager. I've ran that on Whiite before, although it's a bit buggy and you have to compile it yourself.

I'd recommend just installing an X server. Particularly Fluxbox as it is very lightweight and usable.
